Mac & cheese


Item Name: Mac & Cheese
Yield:  4 ½ Cup sauce - 6 servings
Ingredients:
For the Bechamel sauce

  • ½ stick butter  (2 oz)
  • ¼ C + 2 T . flour
  • 4 C.  Milk
  • 1 T salt
  • 1 ½ t White pepper
  • dash Nutmeg

For the Mac & Cheese
  • 2 T chopped garlic
  • 3 oz shredded cheddar
  • 3 oz shredded smoked gouda
  • 2 oz Shredded parmesan
  • 5 C Cooked cavatappi or torchio pasta 

For the topping
  • 2 T Melted butter
  • ½ C Panko bread crumbs
  • 2 T Romano cheese, grated
  • 2 T Parmesan cheese, shredded
  • 2 T Chopped parsley
Method of Preparation:
  • 1. Make Bechamel sauce first - Melt butter in small sauté pan
  • 2. Whisk in flour  - cook roux at least 10 minutes on low flame
  • 3. Bring milk to a boil
  • 4. Whisk hot roux into hot milk
  • 5.  Season with salt, pepper and nutmeg
  • 6. Simmer sauce about 5 - 10 minutes on very low flame

Assemble Mac and Cheese: 
  • Whisk in garlic and cheeses  - mix until cheese in melted
  • Fold in pasta - or place pasta in casserole and pour sauce over
  • Bake if desired topped with buttered crumb mix
