Macadamia Nut Crusted Haddock with Citrus Brown Butter

2 cups dried white bread crumbs
1 ¼ cup rough chopped macadamia nuts
2 Tbls. chopped fresh parsley
4 oz. melted butter
salt and pepper to taste
Mix all ingredients to make crust

Fish preparation:
1½ lbs. fresh haddock (4-6oz. portions)
¼ cup dry white wine
4oz. butter
salt and pepper to taste

On baking sheet place haddock skinned side down, sprinkle with white wine, season with salt and pepper, press layer of crust evenly over haddock. Drizzle butter over crusted fish.
Bake at 400° in preheated oven with convection if available for approximately 8 minutes or until crust is brown and haddock flaky.

Citrus Brown Butter:
½ lb. butter
zest & juice: ½ lime, ½ lemon, ½ orange

Using heavy sauce pan, melt butter over medium high heat, allow to heat until butter has browned with a nutty aroma, watch to prevent burning. Butter needs to cool to just warm or room temperature, add zest and juice.
