Recipe for Spinach Artichoke Hand Pies:

Spinach Artichoke Filling

  • 1 c cooked, chopped spinach
  • 1 c chopped artichoke hearts
  • ½ c chopped carrots
  • ½ c diced onion, raw
  • ½ c mayonnaise
  • ½ c sour cream
  • ¼ c Dijon mustard
  • 2 Tb Worchester
  • 1 Tb dried oregano
  • 1 Tb granulated onion
  • Tabasco to taste
  • Salt and pepper to taste

2-3 oz goat cheese, fresh

Flat-leaf parsley for garnish

Combine all in medium bowl

Place approx. ½ c mixture on piece of (6"x6" for standard, or 3"x3" for hors d'oeurve size) pate brisee that has been rolled out to 1/8".  Place  dollop of goat cheese on top of the mixture

Egg wash edges of dough

Fold corner to corner, making a triangle and press edges

Score top to vent and egg wash top and place a few leaves of parsley

Chill before baking

Bake at 350 for approx. 25 minutes, or until golden brown

Pate Brisee:

  • 2-7/8 c all purpose flour
  • 3 Tb granulated sugar
  • 2 t kosher salt
  • 8 oz cold butter, unsalted
  • 3 ea egg yolks
  • ¼ c heavy cream

Combine heavy cream and yolks

Combine all dry ingredients

Chop cold butter, add to dry ingredients and mix on speed one until you see pea size pieces of butter

Add cream mixture all and once, while mixing, and continue to mix just until mixture becomes dough

Press onto clear wrap and chill for at least one hour, then roll out and continue recipe as above
