Jessica Parrott, from the Nothing Bakes Like A Parrott bakery, shares her recipe for a whimsical, moustachioed cupcake called "The Mr. Sherman."

RECIPE:

CAKE:

  • 1 1/2 c All-purpose flour
  • 1 c sugar
  • 1/4 c cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 c water
  • 1/3 c vegetable oil

FILLING:

  • 8 oz. cream cheese, softened
  • 1 c sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 c peanut butter chips

FROSTING:

  • 2 sticks / 1 c unsalted butter
  • 2 pounds powdered sugar
  • 1/4 c whole milk
  • 1 tsp vanilla extra

METHOD:

1. Pre-heat oven to 350 degrees

2. Place 16 cupcake liners in a cupcake pan, set aside.

3. Beat softened cream cheese in a mixing bowl, add sugar, egg and vanilla. Mix until well combined.

4. Fold in peanut butter chips, set bowl aside.

5. In a different mixing bowl, add flour, sugar, cocoa, baking soda, baking powder and salt. Mix until combined.

6. Add water, oil and vanilla to the flower mixture. Mix until just combined.

7. Fill paper-lined cupcake tray half way with chocolate cake batter.

8. Top each with 2 tablespoons of cream cheese mixture

9. Bake 16 minutes.

FROSTING: 

1. Cream together butter in a mixing bowl.

2. Add powdered sugar to butter, continually mixing, add 1 tsp of vanilla.

3. Add milk, 1 tablespoon at a time until frosting is at a soft consistency, easy for piping.

4. Fill piping bag with frosting, top each cupcake

5. Top with a chocolate moustache!
