LISA KOSTOPOULOS' STUFFED FRENCH TOAST
Lisa Kostopoulos of The Good Table Restaurant in Cape Elizabeth is the four time winner of Maine Restaurant Week's Incredible Breakfast Cookoff. This year's cookoff is being held on Friday, February 28th at Sea Dog Brewing Company in South Portland. Doors open at 7:00 AM. Tickets are still available, but must be purchased in advance.

The Good Table's Blackberry Stuffed French Toast
1 1/3 cup milk
sprinkle of cinnamon
8oz soft cream cheese
4oz marscapone cheese
shaved white chocolate
trace amount of finely chopped crystalized ginger
4 slices of brioche bread
spread filling between 2 slices of brioche.
dot with blackberries.
top with shaved white chocolate and ginger.
top with second piece of bread.
dip in egg batter.
let it soak into the bread to achieve a custardy french toast.
butter frying pan and over medium heat lightly brown each side
finish in 350 degree oven until puffy.
cut in 1/2 crosswise, sprinkle with powdered sugar and fresh blackberries.
