Robert Moody's Sweet Potato Soufflé & Sweet Potato Pie

For the base:
3 cups mashed sweet potatoes
1 cup sugar
3 eggs
½ cup condensed milk
1 ½ teaspoon vanilla
1/3 stick melted butter

Peel and cube the sweet potatoes. Boil until soft and prepare as you would mashed potatoes. Combine all ingredients to create the mixture that is the base for both the pie and the soufflé.

For Sweet Potato Pie, pour the mixture into a ready-made pie shell and bake at 375 degrees for 40 minutes.

Topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 stick melted butter

To create the soufflé, pour base into a casserole dish and top with the pecan mixture. Bake at 350 for 20-30 minutes.
