Portland & Rochester Public House's Seared Mussels with Fries

2 lbs Bangs Island Mussels
Dash of salt
Olive oil

In a mixing bowl, toss mussels, oil and salt

Place a pan on high heat until piping hot.
Put mussels in the pan, cover for 4-5 minutes tossing once or twice.

Tarragon Aioli

2 cloves of garlic crushed and One room temp egg yolk in a mixing bowl
VERY SLOWLY, drop by drop - add 1 cup olive oil whisking w a fork
dash od falt and fresh chopped tarragon

For a quick substiutute, add a bit of garlic and tarragon to your favorite store bought mayo...



5 Maine potatoes, washed and cut ito 1/4 inch sticks
Soak for at least 2 hrs. remove onto paper towel and pat dry
heat oil to 300 and blanche fries for 4 minutes.
remove onto paper towel again and pat dry.
allow to cool
The above can be done hours or even days in advance and kept in the fridge.

When ready to cook fries, heat oil to 400 degrees.
Place fries in oil for 3-5 minutes or until crispy and golden brown.

Season with salt and any herbs you might like.
