HARBOR FISH MARKET'S LOBSTER SHORTCAKES

The Harbor Fish Market cookbook, HARBOR FISH MARKET, is available at local bookstores and libraries, and at Harbor Fish Market in Portland, ME.

LOBSTER SHORTCAKES

Serves 4

1/4 cup salted butter
2 cups cooked lobster meat
1 cup cream
1 tablespoon flour
1/4 cup milk
pinch of sugar
pinch of paprika
salt and pepper, to taste
4 homemade biscuits

This recipe calls for homemade biscuits, but it's ok to bend to time
constraints and use Bisquick Mix, and they always come out of the oven perfectly.

Melt the butter in a large skillet; add the lobster meat and heat. Add
the cream and simmer for 5 minutes. Stir in the flour and cook until it thickens. Add the milk while stirring. Add the sugar, paprika, salt, and pepper. Serve over split homemade biscuits.
