Amy Bouchard's Fruit & Nut Bars
1 cup nuts, coarsely chopped (walnuts, almonds, pecans, cashews)
½ cup seeds (sunflower seeds, pumpkin seeds, sesame seeds)
½ cup dried fruit (cranberries, blueberries, unsweetened coconut)
Dash of salt
¼ cup rice crispies
¼ cup sweetener (honey, agave, maple syrup, light corn syrup)
1 tsp vanilla
Preheat oven to 325. In a medium bowl, combine nuts, seeds, dried fruit and crispies. In a small bowl, mix honey or syrup, salt and vanilla. Pour liquid mixture into nut mixture and mix until well coated.
Line a small 8 inch square pan with tin foil or parchment paper. Lightly spray with nonstick cooking spray. Press mixture into pan and press down to make it even. Bake for 18 minutes. Cool in pan for about 20 minutes. Use foil or parchment to lift the square out of the pan. While still warm, cut into bars. Wrap bars well in wax paper, parchment paper or cellophane. Store in an airtight container for up to two weeks. Get creative and try mixing different nuts, seeds and fruits!
