Panzanella Bread Salad

4 cups tomatoes, cut into large chunks
4 cups day old bread, cut into 1 " cubes
1 cucumber, cut into large chunks
½ red onion, chopped
1 bunch fresh basil, torn into small pieces
½ cup olive oil
3 Tbsp. red wine vinegar
Salt and pepper to taste

Mix everything together and let marinate, covered, 30 minutes at room temperature or up to 12 hours in the refrigerator.

Chocolate Zucchini Cake

½ cup soft Butter (1 stick)
1 ¾ cup Sugar
1 tsp. Vanilla
2 ½ cups Flour
4 Tbsp. Cocoa
1 tsp Baking Soda
½ cup Chocolate Chips
½ cup Vegetable Oil
2 eggs
½ cup Sour Milk *
½ tsp Baking Powder
½ tsp Cinnamon
2 Cups Zucchini, seeds removed and grated

*To sour milk, add ¼ tsp vinegar to milk.
Preheat oven to 325 and grease a 9X12 inch pan. Cream Sugar and eggs: Add Oil and vanilla and stir in cocoa. Mix all dry ingredients together in a separate bowl. Add dry ingredients & milk alternately to the sugar and egg mixture. Stir in zucchini and chocolate chips. Pour mixture into your greased pan and place in preheated oven. Bake for 40-45 minutes. Allow to cool and serve plain, with whipped cream, or frost with vanilla frosting. Enjoy!
