David Turin's Lobster Stew

Yield: 4 bowls

Ingredients:
2 Fresh lobsters, cooked chilled, picked and chopped
2 T butter + 1 T butter for finish
1/2 t Paprika
Salt and Pepper to taste
3 C Milk
2 T chopped parsley

Method of Preparation:
1. In Medium sauce pan Sauté lobster in 2 T butter with paprika, salt and pepper about 2 minutes until paprika has fully colored butter and lobster
2. Add milk and bring up to boil - add 1 T butter and stir into soup
3. Serve into 4 bowls and garnish with chopped parsley

Yield: 4 bowls

Ingredients:
2 Fresh lobsters, cooked chilled, picked and chopped
2 T butter
1 t sugar
Salt & pepper to taste
½ C cooked fresh corn kernels
½ C shaved fresh fennel
½ C Chopped fresh tomato
3 C Heavy cream
2 T chopped parsley

Method of Preparation:
1. In Medium sauce pan sauté corn and fennel in 2 T butter sugar and salt and pepper until fennel looks tender
2. Add lobster, fresh tomato and cream
3. Bring pot to boil, reduce until cream thickens enough to coat the back of a spoon
4. Serve soup into 4 bows and garnish with fresh parsley
