Linda Bean's Maine Lobster's Shrimp Wiggle

Shrimp Wiggle

• 12oz Maine shrimp, cleaned
• 2 cups of milk
• Pinch of nutmeg
• 2oz butter
• 2oz flour
• Cooking oil
• 1 cup English peas
• Fresh baked biscuits or Saltine crackers
• Salt
• Pepper

For sauce:
In thick bottom saucepan over medium heat put butter and flour, whisk frequently to avoid lumps. Cook until mixture begins to darken, slowly whisk in milk and reduce heat. Allow mixture to thicken, be sure to whisk and scrape bottom to avoid scorching. Add a pinch of nutmeg and remove from heat.

For Wiggle:
Into a hot sauté pan add oil then place shrimp in, being careful not to splash oil. Cook until shrimp just begins to turn opaque (45 sec), quickly add sauce and English peas, and return sauce to a simmer. Season to your taste.

To Plate
Place a layer of saltine crackers or a biscuit cut in half and lay open in the center of your dinner plate, ladle Wiggle over the top. Enjoy!
